My Fav Recipes
British Fruitcake
Ingredients
150g flour + 50g high protein flour
1/2 tsp baking powder
(mix)
200g butter
150g brown sugar
4 eggs
Methods
Step 1
Mix the fruits & nuts :
320g mixed fruits (raisins, apricots, orange/lemon peel)
40g sweet cherries (red n green)
80g mixed nuts (almond, walnut, hazelnut, cashew nut)
1/2 cup brandy or rum
(soak the mixed fruits & nuts for a week - month)
Step 2
* Mix butter + sugar, add eggs 1 by 1 + 1 tbsp brandy or rum
* 1 tbsp condensed milk, fresh orange or lemon peel (grated)
* 1tsp cinnamon powder + 1/2 tsp clove powder then mix everything.
* Put 1/6 of the flour, mix, add more flour, mix etc till all the flour
is added.
* Put 1 tbsp of flour to the fruits & nuts, mix well add fruits & nuts
to the dough/batter.
* Mix in with a large spoon in a cross motion(not in a circle motion)
* Line a baking tin with paper.
* Bake the cake 170C for 20 min then 160C for 40min
* When ready brush some more brandy/rum on top.
* For best results....wrap the cake in aluminium foil after cool.
* Brush brandy or rum.....time to time or everyday for a week or more before serve...
Boston Cheesecake
500g cream cheese (room temp)
120g butter
80g sugar
6 egg yolks
(mix well)
Add 4 tbsp whipped cream
1 lemon (Juice only) and grated peel
Separately whip 6 eggs whites + some lemon juice + 40g sugar
Combine these 2 mixtures add 60g flour + mix with a large spoon
Bake on top of the hot water in the oven 160C - 170C
time 35 - 40min (or 60min) or more
test the cake first b4 taking
when ready do not take the cake out remove the hot water
open the door of the oven a bit wait till the cake gets colder
Durian/Banana Bread
200g butter/margerine
100g sugar
2 egg yolks
Mashed durian or Banana 2 pcs
Add 1 tbsp honey + brandy
Beat 2 eggs whites separately
Add then to the batter of the cake
+ 200g flour and 1 tsp baking powder
Mix all with a loarge spoon
Bake in a tin for abt 50min (160C)
Vegetarian Cupcake
240g plain flour
3 1/2 tsp baking powder
2 tbsp milk powder
180g margarine
145g soft brown sugar
1/2 tsp vanilla essence
145ml fresh milk
140g mixed fruits
Sift flour, baking powder and milk powder together.
Beat margarine and sugar until light and fluffy.
Add essence and gradually pour in milk.
Continue to cream until well combined.
Fold in sifted dry ingredients and stir in fruits.
Transfer batter to paper cases.
Bake in a preheated oven at 160C for 15 minutes or untill golden
brown and cooked through when tested with wooden skewer.
